Friday Lunch

Lunch was another adventure and we were not disappointed. I had delicious beans and plantains. Others had fu fu or banku. They ate with their hands and used the fu fu or banku to dip and scoop the main dish. It reminded me of Abai in Pittsburgh.

Those that ate with their fingers had a bowl of water to wash their hand (yes one hand) before they dug in.

    What are fu fu and banku?

      Fu fu and Banku are both doughy breads. Banku is made from maize and cassava. Fu fu is made from plantain and cassava. To me they are both undercooked blobs of dough, very sticky and globby. It seems like dough you’d knead and then cook, but that’s how they’re served.
